Perfect, quick salad for lunch:
Mix together:
1 package romaine lettuce (contains 3 hearts)
3 Roma tomatoes, chopped
1 can black beans, drained and rinsed
1 can sweet corn
1 cup grated Cheddar cheese
Optional: 2 cups diced cooked chicken
Dressing:
1 cup sour cream
3/4 cup chunky salsa
Mix dressing ingredients together, pour onto salad and toss.
I add crumbled tortilla chips.
