Spinach Lasagna

1 box of lasagna noodles
2 TBS olive oil
1 cup chopped fresh mushrooms
1 cup chopped onion
1 TBS minced garlic
2 cups fresh spinach
3 cups riccotta cheese
2/3 cup grated Romano cheese
1 tsp. salt
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp ground black pepper
1 egg
2 8ox bags mozzarella cheese
1 28oz. jar spaghetti sauce (I used a marinara)
1 cup grated Parmesan cheese

Preheat oven to 350.
Boil lasagna noodles and set aside.
In a skillet, saute mushrooms, garlic and onion in the olive oil and tender.
Cool.
Boil fresh spinach for 5 minutes and drain and squeeze dry, then chop.
Combine ricotta, Romano, spinach, salt, oregano, basil, pepper, and egg in a bowl.
Add cooled mushroom mixture.
Beat with an electric mixer on low for a minute.
Lay noodles in bottom of 13 x 9 pan. (Spray with cooking spray first.)
Spread 1/3 mixture over noodles.
Sprinkle with 1/3 mozzarella and 1/3 of Parmesan.
Spread 1/3 spaghetti sauce on top.
Repeat twice.

Cover dish with foil and bake in oven for 1 hour.

SO GOOD!

  1. I've had fun checking out your latest recipes. These look delicious. I like to serve at least two meatless dishes a week, so it is fun to add some recipes to my menu. Right now some of our favorites (meaning everyone in the family will eat them) are fettucine alfredo, grilled cheese sandwiches dressed up, and cheesy vegetable soup. Hmmm.....I'm in trouble if I ever have to give up cheese! I'll take cheese over meat any day!

    I too am trying to create a more healthy menu for our family. I gave up sweets for lent and except for the girl scout cookies, the whole family is eating less sweets. One thing that I wanted to add is using a roasting chicken that you can purchase at the grocery store, just take the meat off of it. I do this for many things to speed up the "process". Also, a friend told me many years ago that you really don't need to boil lasagna noodles first as they cook in the oven. This has saved me many headachs and actually allows me to prepare it more often:) I also dont cook my spinich first, I just put it in fresh-the kids love it! I hope that this will help You a bit!   3. I'm so excited about your recipes. We had watched Food Inc. as well and since we now have a 4 month old daughter, we decided it was a good time to switch to organic and try and be more aware of what we are eating. We found a local farm that delivers organic produce. It's so great and easy, and we've been eating so many more veggies and fruit. I really enjoyed your post on changing the way your family eats. Thank you, and I'm looking forward to more recipes!

  5. I've been following your other blog, but I need to tell you thank you for posting some family friendly vegetarian meals!! I have a 2 year old and she can be picky, but my husband is the one I was worried about! haha. Keep posting!

    Also, I have loved hearing about your sugar free lifestyle. I know that I'm addicted to sugar so I just need to kick it. I keep making up excuses though, like potty training next week and I just don't think I can do two hard things at one time. So, after that I'm jumping on the sugar free way of life!!

  7. Thank you for sharing your recipes. I am trying to eat healthier but it has been a challenge. I wish there was a way for you to send your recipes and meal plans every week. Lol, look at me desparate! I found your blog through sneaky momma. She posted about your header through Picasa! I am so thankful you took the time to share that! Now I have a header that I am happy with and it took me less than 20 minutes to do! God Bless!

    I really enjoy your blog. I recently watched Food, Inc. and I'm slowly trying to incorporate some changes in our family's eating habits. Are you buying everything organic now? Including the pasta sauces, cheeses, etc?

    I'm making my first grocery run since watching Food, Inc. and I'm going to make an honest attempt at searching out organic.

  11. Can I just say that exact dish is on my menu for tonight.... if I can rise to the challenge!! ha ha! it is so easy ... but the kids don't love it... so I make them mac and cheese!! ha ha! more for us parents! it is rainy here... perfect comfort food!
