Broccoli Cheese Soup


1 box of vegetable broth
1 cup of water
1 small container of half and half (about 1 cup)
4 oz. cheddar cheese
1/2 cup whole wheat flour
1/2 tsp onion powder
1/4 tsp ground black pepper
4 cups broccoli florets

In a large pot over medium high heat combine broth, water, half and half, cheese, flour, onion powder and ground black pepper. WHISK all together to break up lumps.
Bring to a boil and reduce heat to low.
Stir in the broccoli and simmer for 15-20 minutes until broccoli is tender.

  1. OK - so most weeks I do at least a few of your recipes - they're super easy and all kids (and parents) like them. I have referred the blog to SO many friends. My issue...how to plan and ahead for everything!? Do you do it week by week? I'm pregnant with #4 and knowing I won't be able to do much two-handed after she's born....makes things daunting again! Help! :0)

  2. That looks as awesome as Panera's tastes. I can't wait to try this once the weather turns back Fall....not a big soup person in the summer. :o)
