Almost No Sugar Banana Muffins

1 cup all purpose flour
1 TBS baking powder
1/2 tsp baking soda
1/4 tsp salt
3 ripe mashed bananas
a little less than 1/4 cup sugar
1/4 sour cream
1 egg
1/2 tsp. vanilla extract

Preheat oven to 350 degrees. 
Mix together banana, sugar, egg and vanilla.
Stir in sour cream.
Add dry ingredients.

Scoop into muffin cups. (Makes 12.)
Bake for 15 minutes.
For best flavor, put in a ziploc bag overnight.

  1. Yum - I am going to try your recipe. Mine call for shortening and uses vanilla instant pudding. Why didn't I think about sour cream? Also, to make my baked goods a little healthier, I have been using oat flour to substitute about half of the flour called for in a recipe -- even in choc.chip cookies. It's really expensive, so I either use the Magic Bullet or blender and blend regular oats until you get a flour consistency. Blesssings!

  2. Sarah - My sweet hubs made these for me today, it was the only thing that sounded remotely good to me after a bout w/ the stomach flu...they were excellent! The kids love them too...thanks and keep the great recipes coming!
