Cilantro, Black Bean and Corn Salsa with a side of White Cheese Dip

I'm so addicted to this salsa. It's so good with just chips, but I've also used it as a side to grilled chicken. You could also put some grilled chicken pieces in it, and serve it as a salad.

Cilantro, Black Bean and Corn Salsa
1 can of yellow corn drained
1 can of white corn drained
2 cans of black beans drained and rinsed
1 can of diced tomatoes
1 bunch of chopped fresh cilantro
5 green onions, sliced
1 small red onion, chopped
1 red bell pepper, chopped
2 avacados, diced
1 TBS minced garlic
1/4 cup lime juice
3 TBS olive oil
3 TBS honey
Mix them all together and YUM.
(Use good chips...they make all the difference.)

I also served this with this recipe and the kids LOVED it:

White Cheese Dip
1 pound of white American cheese, cubed
1/2 cup milk
1 TBS butter
1 4oz. can chopped green chilies
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
cayenne pepper to taste
Place cheese, milk and butter in a saucepan over low heat. Cook and stir until cheese has melted. Stir in the rest of the ingredients. Add a little more milk if it's too thick for you. Heat through and serve immediately.
(Take a good chip, dip in salsa, drizzle the cheese dip on top...and now you know that you too have a terrible addiction.)

  2. My Hubs and I love the salsa but the kids won't touch it. I like the wet ingredients in yours--I'll give it a try. However, the kids will love the white cheese dip so I'll try that too. Thanks!

  4. That cheese dip sounds devine and not so fatty fatty like the velveeta version. Indulgent, yes.....but not so heavy. Can't wait!

  5. Oh my. This looks fabulous! I am definitely going to make this. My kids would probably trample each other to be the first to taste the white cheese dip. I am doing a little roundup of fun ideas on my blog today, and I plan to include this.

  10. I love this bean dip! It tastes exactly like our local little grocery store's black bean dip. I have been searching for a recipe.. I think the lime/honey dressing is the secret!

    The closest I could come was Allrecipes popular spicy bean salsa recipe, but this is way better

I came across your blog tonite, and while I've admired your talent with words, your ability to make photos jump off the screen, it is THIS RECIPE PAGE THAT I LOVE!!! I have the pickiest two kids on earth, and I've done myself no favors by catering to their pickiness! I am going to try all these recipes, and I'm excited!   15. Somehow for someone who hates beans, and uncooked onions and peppers... I found this Salsa IRRESISTABLE! It is sooooo good and easy. We love to share it as a take along snack to friends' houses.

  17. I am not familiar with white american cheese... does it come in a block? I think I have seen white american cheese slices? Is there a brand you use you could share so I could figure out what to look for? Thanks! Sounds delicious!!!

  18. It does come in a block if you want it too..I buy it at the deli counter, unsliced. It's a mild white could use something else to substitute for it I bet, and it would still be great.

  19. I just made this today. Minus the avacado (i've been reacting funny to it???) plus GARLIC olive oil from Savory! DE-LISH! Thank you for the healthy snack idea that turned into lunch AND dinner for me! :)
